Estate-bottled Chilean Extra Virgin Olive Oil - 33.8 oz - $30

This estate-bottled extra virgin olive oil has a polyphenol count of 416 milligrams, which is very high for an extra virgin olive oil with fruity notes.

Almost all commercial coconut milks and creams have additives to prevent the water from separating from the coconut oil, and also have sulfites added to keep it white longer.

Einkorn Whole Grain Flour - 5 lb bag - $23

Lower gluten alternative to modern wheat.
Glyphosate tested.
Compared to modern wheat varieties, einkorn has higher levels of protein, crude fat, phosphorous, and potassium.

Has the highest amounts of lutein of any other variety of wheat.

Einkorn Ancient Grain is a lower gluten alternative to modern wheat. It has a gliadin to glutenin ratio of 2:1 compared to 0.8:1 for durum and hard red wheat. It is classified as a “diploid” because it only has two sets of chromosomes. Modern wheat varieties are classified as “hexaploid,” having six sets of chromosomes, due to a long history of hybridization.

It should be cautioned that einkorn DOES contain gluten, and so those desiring to avoid all gluten are NOT recommended to consume einkorn.

Authentic Mexican Corn Tortilla Chips (6 pack) 16 oz bags - $69

Ingredients: Organic Blue Corn, Coconut Oil, Himalayan Pink Salt, Lime/Calcium Hydroxide (processing aid during nixtamalization of corn)

The corn is sourced from a farm in Central Mexico. GMO corn is banned in this region, therefore the risk of cross contamination from GMO corn is much lower.

The traditional Aztec process of nixtamalization is a process where the corn is soaked and cooked in an alkaline solution of limewater
(calcium hydroxide and water), which allows the husk to “slip” from the kernel. This processis beneficial in several ways.

It removes virtually all the mycotoxin that can be present on corn.
